Welcome to the very first edition of Celiac Circle’s Celiac Sundays! I’m so grateful you’re here, whether you're living with celiac or loving someone who is, this space was made for you. Each week, you’ll get practical tools, recipes, and resources to help you navigate celiac with confidence

First things first…what is celiac?
Celiac disease is an autoimmune condition where the body mistakenly reacts to gluten, a protein found in wheat, barley, and rye. This reaction damages the small intestine, leading to a range of symptoms, from digestive discomfort to fatigue, skin issues, and nutrient deficiencies.
Unlike a gluten intolerance or allergy, celiac requires a strict, lifelong gluten-free diet because even tiny amounts can cause harm.
đź§ Important things you might not know:
Symptoms vary widely. Some people don’t experience digestive symptoms at all but may have anemia, joint pain, or brain fog. Gluten can be hidden in unexpected products: medications, supplements, and even cosmetics. Always read labels carefully. | The FDA allows “gluten-free” labeling for products with less than 20 parts per million gluten, but for sensitive individuals, that small amount can trigger symptoms. Certified gluten-free products are a safer choice. Cross-contamination is a serious concern. Even trace gluten from shared kitchen surfaces or utensils can cause damage. |

Easy Vegan Greek Sheet Pan Dinner
My aunt recently shared this recipe with me, and it quickly got our family curious to try it. It’s loaded with colorful veggies like bell peppers, zucchini, and red onions, along with chickpeas for a little extra protein. Tossed with lemon, garlic, and oregano, so it will smell amazing while it’s roasting. The best part…everything cooks on one sheet pan. This recipe is naturally gluten-free and full of fresh flavors that don’t make you feel like you’re missing out. It’s also vegan, which makes it a great option whether you’re plant-based or just want a light, healthy dinner.
Snack MVP: SkinnyPop Popcorn
A really quick shout-out to my aunt’s favorite snack: SkinnyPop. If we ever have to bribe her, we get a giant bag (which only lasts one night) at Costco or Sam’s Club and she will do anything!
