Label Says Gluten-Free, Gut Says Otherwise
Because sometimes your stomach is a better fact-checker than the front of the box
Hi, Circle
We’ve all been there, the label screams “GLUTEN-FREE” and our stomachs still say absolutely not. This week, we’re talking about the fine print, the red flags, and what to watch for when “gluten-free” doesn’t mean what it should.
The Label Lie
Here’s the thing: “gluten-free” on the front doesn’t always mean “safe” for people with celiac. Brands can legally label a product GF even if it’s made in a shared facility, and the FDA only requires it to be under 20ppm.
That’s why it’s worth always flipping the package over, even for brands you trust. Look for:
Barley malt / malt flavoring = automatic nope
Wheat starch (unless labeled codex GF)
Oats that aren’t certified GF
“May contain wheat” disclaimers (use your judgment here)
🥇 Snack MVP
Simple Mills Sweet Thins – Honey Cinnamon

🍴 Recipe of the Week
Gluten-Free Sesame Chicken from Gimme Some Oven
Crispy, sticky, better-than-takeout and 100% gluten-free.

It uses cornstarch + tamari instead of soy sauce, and the sauce is spot-on. Pair with white rice or cauliflower rice and maybe a little steamed broccoli if you're feeling virtuous.

The Celiac Disease Foundation’s Product Finder

Search for snacks, baking ingredients, frozen meals, and more — all vetted and labeled for celiac safety. Especially helpful if you’re newly diagnosed or just tired of scanning barcodes in the grocery aisle like it’s your job.
💡 Try This
Before you check out at the store this week, take one thing out of your cart and replace it with a certified gluten-free version even if it costs a little more. It’s worth experimenting to find safe staples you actually like.
See you next time,
